Bacteria that causes foodborne illness needs a moist and warm environment in order to grow. In addition if food is at room temperature that can cause bacteria to multiply. Raw food can also cause food to have more bacteria because it has not been killed off by extreme heat.

Bacterial reproduction depends on the favorable temperature, moisture and growth medium.

Bacteria is an organism which are classified as the prokaryotic and is a unicellular organism. They possess very simple structure as it lacks a nucleus and mostly has single circular DNA. They also possess the extranuclear DNA known as the plasmid. They are surrounded by two protective covering as they have outer cell wall and an inner cell membrane.

Mostly the bacteria multiplies by the binary fission process in which a single bacterial cell known as the parent replicates its DNA and grows in size by doubling its cellular content. After that the cell splits and creates two identical cells. The reproduction of bacteria is affected by the factors such as temperature, its environment and the moisture.

Introduction of variation into the genetic material occurs by integrating the additional DNA from the surrounding into their own genome. This is a kind of horizontal gene transfer.

There are three different ways of horizontal gene transfer. They are:

3. Conjugation
