Sugar is separated from water by evaporation of the sugar solution to dryness.

i) The process of that causes the sugar to spread throughout the water is called solvation.  Solvation simply refers to the interaction of a solute and a solvent.

ii) To make the sugar to dissolve quicker;

  • The temperature of the solvent can be raised
  • The system can be stirred periodically
