The first step in the dish washing process is intended to remove the food bits from the surface. This is done by scalping the surface.
The second step is intended to wash the surface needed.
The third step is intended to rinse the surface using clean water.
The fourth step is intended to sanitize the cleaned surface.
The fifth, and last, step is intended to allow the washed surface to dry.

The five steps of the dish washing process include;

1. Rinse or remove food leftovers on the dish surface.

2. Wash the surface with hot water and detergent.

3. Rinse the dish with clean water.

4. Apply a sanitizing solution on the dish.

5. Air-dry the dish (do not dry sanitized dish with towels).


The reason for the cleaning step in the 5 step of the dish washing process (air drying the dish) is to prevent the growth of bacteria on the surface of the dish. If the surface of the dish is left undried, it could become a breeding place for bacteria and can cause diseases when the dish is used.
