Because the evaporation is like a filter it leaves most things behind like bacteria or salt then when it comes down from the sky (or rain :P) it is safe to drink (NEVER DRINK WATER THAT IS DRIPPING OFF A ROOF!!!). but if air pollution gets into the cloud it could contaminate the vapor and turn it into acid rain which can do lots of damage.

The water when rising from the oceans comes as a freshwater vapor as it is the breeze that is being generated due the left over particles of salt.

  • The water is fresh as the hydrological cycle recycles the water that was left behind and due to the process of  evaporation.
  • it appears as fresh vapor.

Hence the evaporation leaves the ocean's salt and particles behind.
