Pepsin is needed in the digestion of protein, a decrease in pH of the stomach will distort the active site of the enzyme pepsin, which affects it's action. Because pepsin is a tertiary protein that possesses many bonds, a change in pH will see these bonds broken, and in so doing change the shape of the enzyme as well as the active site shape and as such affects the overall function of the molecule.
